Even More Delicious When You Know the Story
Jeokto Balhyo Gui Menu

The soil is called *jeokto* (적토), or "red earth," because of its reddish color.
It's rich in iron oxide
and absorbs moisture exceptionally well,
which makes it incredibly effective at promoting fermentation.
Red clay used for Onggi (옹기)
It's said that jars made with red clay
contain the power of deep flavor.
And here are the signature dishes of Jeokto (적토) restaurant, fermented in those Onggi jars

A perfect harmony of 'jeot' (fermented seafood), meat, and aroma
—the signature menu, Jeotsamgyeop (젓삼겹).
It offers a tangy flavor
you can't find in regular pork belly (삼겹살).
Even for someone like me who doesn't usually prefer jeotgal (젓갈) (fermented seafood), it was fantastic!
(It kind of reminded me of a spicy Kodari (코다리) dried pollack seasoning.)
So, at first, we ordered the basic fermented pork belly and pork neck (목살),
but I couldn't resist and ended up ordering Jeotsamgyeop too! Haha.

Let's kick off our meal with hygienically packaged cutlery!
Review of Jeokto Balhyo Gui Yongsan Branch (적토발효구이 용산점)

Not a stone grill,
but a grill that feels like Onggi earthenware,
and perfectly neat banchan (반찬)!

The meat comes out pre-grilled,
and this grill plate allows you to enjoy it
tender and juicy, without overcooking it.

Perfectly aged green onion kimchi (파김치) and meat... a match made in heaven!

And lol, it might seem like a small thing,
but I totally fell for the cutting power of their meat scissors!
Jeokto Balhyo Gui, a true gem in Yongsan, Seoul (서울), is serious about even their scissor maintenance!

Pork neck can often be a bit dry,
but this pork neck was incredibly tender.
Is this the magic of fermentation?
The mushrooms and Korean shishito peppers (꽈리고추) served alongside also harmonized perfectly with the meat.
good!

And then, the Jeotsamgyeop I ordered with no regrets!
I thought I might find it off-putting because it's fermented seafood,
but the subtle, not-too-overpowering jeotgal aroma makes it
a true 'rice thief'! 🍚

Finishing strong with dessert, too!
Rice made with fermented salted seafood, Jeotbap (젓밥)
(Be careful with the pronunciation!)
Its umami flavor is so good, you definitely want to save some meat
and eat it together.
It’s not Tojangjjigae (토장찌개), Cheonggukjang (청국장), or Doenjangjjigae (된장찌개),
but it had an exquisite savory depth – a truly wonderful story.

Even after finishing the meat,
you can freshen up
with mouthwash and Snuggle fabric spray! ‼️

With premium domestic meat,
where you can enjoy a delicious meal,
a perfect spot for wedding invitation gatherings in Yongsan, Seoul (서울 용산),
