✔︎ Travelers hunting for authentic, crispy grilled pork entrails (makchang)
✔︎ Anyone craving comforting, warm Korean banquet noodles
✔︎ Foodies searching for the fluffiest, most savory steamed egg soufflé
Whenever life gets a bit stressful, there is nothing quite like K-BBQ to melt the worries away. That's why I made a run to this local favorite.
Guksurang Makchangrang is so famous among locals that people even drive all the way from Seoul to eat here. The tables are almost always packed, but thankfully, we managed to snag a spot without waiting this time!
The Menu
Since we are regulars, we usually order without looking at the menu. However, today we wanted to try their famous Gyeran-jjim (steamed egg soufflé) which goes for ~$3.
At first, ~$3 felt slightly pricey for a side dish, but my friend insisted it was a non-negotiable. So we went ahead and ordered a full platter of grilled pork entrails, two bowls of warm banquet noodles, the steamed egg, and a bottle of traditional Makgeolli (rice wine) to top it off.
They served up the essential dipping sauces and fresh kimchi. On this visit, I noticed they now bring the refreshing young radish kimchi (yeolmu-kimchi) directly to your table instead of having you grab it from the self-serve bar—a lovely upgrade in service!
Our platter of makchang arrived beautifully sliced and ready for the grill.
Normally, we just grill them as is, but today we tried a brilliant local hack.
The Pro-Tip: Stuff a whole garlic clove right into the hollow center of each makchang ring before grilling! The garlic roasts inside the savory pork fat, creating an absolutely mouthwatering combination.
They can be a little tricky to stuff because the garlic likes to slide out, but the extra effort is completely rewarded by the taste.
Since "Noodles" is in the restaurant's name, ordering a bowl of Janchi-guksu (banquet noodles) is an absolute must.
The ultimate way to eat this is to wrap a crispy, hot piece of grilled makchang with a mouthful of noodles. It is an incredible contrast of textures and flavors. Honestly, skipping the noodles here should be a crime!
And now, the main event: the Gyeran-jjim!
While ~$3 might sound like a lot for a side of steamed egg, it arrived in a massive, piping-hot earthenware pot. The portion size was huge, making it incredibly budget-friendly for what you get. It was perfectly seasoned and delightfully fluffy.
Here is another secret menu hack: ask the staff to make it spicy (say, "mae-pge hae-ju-se-yo"). They will mix in finely chopped green chili peppers. It adds a wonderful zest and a mild kick without being overwhelming.
They don't always ask for your spice preference, so make sure to request it when ordering. It feels like a secret menu item only the true regulars know about!
Quick Summary of Local Pro-Tips
When ordering Steamed Egg: Request it spicy ("mae-pge") for a delicious, zesty kick of green chilies.
When grilling Makchang: Stuff a raw garlic clove inside the hollow center of the pork entrails to roast them together in savory pork fat.
✔︎ The Final Verdict
Though the noodles on this particular visit were slightly less flavorful than usual, the grilled makchang was incredibly crispy, savory, and rich. Combined with that massive, fluffy steamed egg, it was the ultimate comfort meal. I know I'll be craving this spot again very soon!
