How to Book, Same-Day Reservations, Reservation Times

Hanwoo Omakase

Just like the main branch in Seoul,

you can reserve the Incheon Paradise City branch

easily through CatchTable.

For Born & Bred Paradise City Incheon,

since lunch runs from 11:00 AM to 3:00 PM,

you can book your lunch spot

between 11:00 AM and 1:00 PM.

For dinner,

you can book a slot from 6:00 PM to 8:30 PM.

Born & Bred Course Options

Private rooms are available for groups of 4 or 6,

but since there are only two of each, you'll need to double-check availability

(calling ahead is recommended).

Born & Bred offers two main course options:

1)

The one that typically comes to mind is the Hanwoo Omakase style—

namely, the

Born & Bred Hanwoo Matgimcharim (Omakase).

This is only available for three slots: Lunch at 12:00 PM, and Dinner at 6:00 PM and 8:10 PM.

An advance reservation is required, and you'll be dining at the private bar

alongside other guests booked for the same slot.

2)

The Born & Bred Casual Tasting Menu consists of 5 courses (including various cuts of premium beef, of course)

and is like a semi-omakase experience.

At Born & Bred Paradise City Incheon,

the Casual Tasting Menu

is served in the main lounge (the regular dining hall).

Available booking times are:

Lunch: 12:00 PM, 1:00 PM

Dinner: 6:00 PM, 7:00 PM, 8:00 PM

You can choose from these five slots,

with a dining limit of up to 2 hours.

Same-day reservations are also possible for the Casual Tasting Menu.

At Born & Bred Paradise City Incheon,

you can enjoy free corkage for wine.

(There is a ~$32 corkage fee for whiskey, high-proof spirits, and other hard liquors,

but wine and champagne have no corkage fee!)

We booked the Casual Tasting Menu to celebrate a friend's birthday and visited at 8:00 PM... (Honestly, we wanted to splash around in the pool a little longer, so we did ask if we could push our booking to 8:30 PM... They said it was fine, but reminded us that they close at 10:00 PM. We figured we'd eat fast, but after taking photos and chatting away, time flew by and we ran out of time, so we felt incredibly sorry... Don't make the same mistake we did! 😅)

The Born & Bred Casual Tasting Menu was ~$106 / person,

and the Hanwoo Omakase Menu was ~$160 / person.

Also,

you can order à la carte cuts and individual meals,

but they say à la carte ordering is only available on weekdays (* Monday to Friday).

But honestly,

a few years ago... quite a while back,

I came to this exact Born & Bred at Paradise City

and ordered à la carte back then.

Since ordering individual cuts of beef easily adds up to a hefty bill anyway

((I think we spent around ~$192 back then too)),

if you're going to feast on beef, you might as well just go with the Casual Dining course.

Because...

this time, oh my gosh, it was incredibly delicious...!!!

Crying, Born & Bred is truly the GOAT. It lived up to the hype!

I was absolutely in awe this time, whereas last time,

I remember thinking, "Eh, it's hard for beef to blow me away..."

Casual Dining Dinner Review / w Birthday Celebration

We headed down to Paradise City to celebrate a friend's birthday,

splashed around at Cimer spa/pool all day long,

and booked Born & Bred for the latest possible slot.

We actually tried not to eat anything because of dinner,

but we couldn't resist grabbing the smoky, fire-grilled Jjamppong at Cimer T_T.

We shared one bowl to avoid getting too full,

but we still ended up heading to Born & Bred

not feeling particularly hungry.

We were running late, so we literally dashed there!

We went for a Saturday weekend dinner,

and luckily snagged a same-day reservation!

The Casual Dining course is served in the lounge (main hall),

and personally, I absolutely loved this setup!

Why?

Because we sat right by the glass window, and the lighting made our photos turn out gorgeous!

Even for someone with a big appetite (like me)...

the 5-course Casual Dining menu left me completely stuffed by the end...

To start, they serve beef tartare (yukhoe) as an appetizer,

and guide you on how to enjoy it.

Oh my goodness, the beef tartare was *so* incredibly delicious.

I was supposed to take pretty photos, but the tartare was so mouthwatering

that these shots were all taken mid-bite with chopsticks in hand...

After that,

the side dishes are served,

followed by the Hanwoo platter...

and different cuts of premium Korean beef are served one by one in order.

These cuts are served individually.

Let's see... there was a cut that's super tender because it doesn't get affected by movement,

a cut from the arm??? or shoulder area,

and the plate/short plate (upjinsal), which is said to touch the ground when the cow lies down,

and the chuck flap tail (salchisal)...

This one is short ribs (galbi).

To be honest, the chef at Born & Bred explained the cuts

so incredibly well,

but I completely forgot the details...

But every single bite was pure heaven!

*Sobs*

He did share the secret of why it tasted so amazing, though:

because he was the one grilling it!

By the time we finished the meat, I was already starting to feel full.

Even the side dishes were all so, so, so

incredibly delicious,

and Born & Bred's kimchi is absolutely out of this world!

They also kindly explained which sauce or side dish pairs best

with each specific cut of beef, which was fantastic.

Like, "pair the fattier cuts with this..."

"and the other cuts with that..."

Anyway, the meal was absolutely amazing.

I’ve actually been a low-carb person since I was 20, almost completely cutting rice out of my life...

....!!!

Even when I visit places like this, I rarely eat the rice dishes,

but the Born & Bred pot rice (?)

The rich beefy aroma and the perfect al dente texture were

so incredibly delicious

that I ended up devouring almost all of it!

And then,

they asked us if we liked cilantro

before serving us the pho.

Since we are both massive cilantro lovers, we said "Extra cilantro, please!!!"

I sat there eating and seriously wondering why

the cilantro I buy at the supermarket never has that amazing, deep fragrance

like the one served here at Born & Bred.

And usually,

the Born & Bred casual dining course wraps up with a dessert like this,

but...

since it was my friend's birthday,

they surprised us with this special birthday dessert plate + a candle + lettering!

Oh my gosh, even the dessert was absolutely heavenly.

And

they were so sweet to turn the lights back on so we could snap some photos..

The Born & Bred chef who served us earlier

saw us taking turns taking photos of each other

and kindly offered to take a photo of us together...

My heart was so warmed! 🥺

Having it as a full course was seriously next-level amazing

!!!!!!

Of course,

maybe we just got lucky that day,

but whereas a few years ago I thought, "Oh, it's just decent beef...", this time it was incredibly delicious.

If you ever visit Born & Bred,

I highly recommend going for the course menu...

Seriously...

(I only write "insanely delicious" in my reviews

for places that are truly, 100% legit...)

Oh, and I also wanted to share a quick review

of the Cimer pool at Paradise City Incheon that we visited earlier in the day,

because it was just too good to miss!

Honestly, this must have been my 500th time visiting Cimer,

but it's amazing every single time.

My friend and I both agreed that this has to be the best hotel pool in Korea.

It's just spectacular...

I mean, it's practically a full-on water park!

You can watch planes fly right overhead,

get a nice tan under the sun,

do some actual swimming,

and even ride the giant water slides!

You can easily lose track of time and spend an entire, action-packed day at Paradise Cimer.

Plus, you can work up a massive appetite swimming and head straight to Born & Bred...

But one thing I realized this time...

after a full day of swimming followed by a huge dinner,

I was seriously so exhausted

that I didn't even have the energy to go home.

lol....

I used to wonder why people bother booking a room at Paradise City for a staycation,

but now I completely understand why staying the night is the way to go.
