Well, I stumbled upon a fantastic spot that serves genuinely spicy ramen, just like you'd hope for!
Forget the predictable Ichiran; dive into Shachirin, a place adored by locals!
It's still largely a local secret, so you're getting in on the ground floor before it gets too popular!

1. Where is Shachirin, and what are the hours?

Nagoya Karammen Shachirin is conveniently located within a 10-minute walk from Sakae Station, making it super easy to visit.

They're open quite late, which is perfect if you want to grab a late-night snack after dinner or a few drinks.
After all, isn't exploring Japan's incredible food scene half the fun?

The restaurant's exterior features a prominent red signboard with 'Shachirin' written in Japanese.
If you don't read Japanese, just look for the red signboard, like in my photo, and you'll know you've arrived!

While the dining space isn't overly large, the ramen-focused menu ensures a quick turnover, so waits aren't usually too long.
2. How do I order?

There's one important thing to know before you visit Shachirin.
Unlike most restaurants where you sit down and then order,
at Shachirin, you'll need to order your ramen at the self-service ticket machine *before* waiting outside for a staff member to guide you in!
As the sign outside the shop indicates,
order at the ticket machine, wait outside, and a staff member will show you to your seat!

Upon arrival, you'll find the ramen ticket vending machine.
You can customize your order with toppings and spice levels, but
here's my foolproof guide to ordering a spicy ramen that hits just right for Western palates:

This place is incredibly popular with locals, so expect a wait during peak meal times.
While the turnover is fast compared to other spots, if you want to avoid waiting, I recommend visiting around 8 PM or 11 PM. Those times were noticeably less crowded.

I admit, I was skeptical. 'How spicy can Japanese ramen really be?' I thought. But wow, this place is truly different!
It delivered a genuinely fiery kick that instantly cut through any richness from other Japanese dishes I'd enjoyed.
Even my friend, who initially suggested Ichiran, raved about this place!

First up, the spicy ramen totally captured my heart. I only ordered 2 slices of chashu, but I highly recommend adding 4! Two just wasn't enough to fully enjoy that savory pork.
I definitely recommend 4 slices.

The broth, infused with garlic and chili, was wonderfully piquant. The noodles were perfectly al dente and chewy, and with the spicy kick and tender chashu, it was a flavor paradise.
This isn't your everyday Japanese ramen; it's a unique spicy experience you'll only find here, making it all the more special and delicious.
(Sorry, Ichiran, but Shachirin wins!)
I'd tell any friend visiting Nagoya that this is a must-try. It truly felt like a local secret – we were the only non-Japanese customers there!

I saw on Google reviews that their Mazesoba (soupless ramen) was also highly rated, so we ordered one ramen and one mazesoba, and the mazesoba was a fantastic alternative!

The Mazesoba, also at spice Level 2, hit that 'Shin Ramyun' spice level perfectly. If you crave even more heat, go for Level 3!
The Mazesoba was generously topped with green onions, minced pork, onions, garlic, and plenty of chili flakes, making for a delicious mix. However, personally, I preferred the ramen over the mazesoba.

If you're visiting Shachirin solo, I'd personally recommend ordering the spicy ramen. But if you're with a friend, definitely order one of each to try both amazing dishes!
