I'm a devoted fan of Korean cuisine, so when I dine alone, I'm not keen on just grabbing fast food.
At the same time, a full-blown, elaborate Korean meal by myself can feel a bit much!
That's where Jinsunmi Dolsot Bibimbap in Chuncheon comes in – it's the perfect spot for a satisfying yet casual meal.
You'll find it on the 2nd floor (Unit 2119) of the Chuncheon Modda Outlet, and trust me, it's a genuine local favorite with queues even on weekdays!😋
Jinsunmi Dolsot Bibimbap operates as a self-service restaurant, with orders placed conveniently via a kiosk.
They also have dedicated 1-2 person seating, making it super comfortable for solo diners like myself.
I ordered the 'Jeyuk Dolsot Bibimbap' (spicy stir-fried pork hot stone bibimbap).
I was extra hungry after finishing up at a skincare academy, so I decided to go all out for a hearty meal – a rare feat for a light eater like me!
After ordering, I popped to the restroom, and when I returned, my meal was already waiting at my table (talk about quick service!).
Inside the sizzling hot stone pot was perfectly cooked rice, a vibrant array of seasoned vegetables, and a generous portion of spicy stir-fried pork piled high!😍
As I dug my spoon deep and started mixing, I realized the portion was far more substantial than I'd anticipated.
(Trying to mix it one-handed while filming was quite the challenge due to the generous amount!)
I usually struggle with very hot food, so I haven't sought out Dolsot Bibimbap much lately.
But as the spicy, smoky aroma of the pork and the nutty scent of sesame oil wafted up through the rising steam, my mouth started watering like crazy – it had been too long!
Taking a big spoonful of the well-mixed rice, it was pure bliss. The pork wasn't dry or tough; instead, its texture perfectly complemented the fresh vegetables, creating a truly harmonious bite.
The accompanying side dishes seem to change daily, and on the day I visited, every single one was a personal favorite, which made the meal even better! Haha.
Plus, I had been craving 'Auk Doenjang-guk' (mallow soybean paste soup) the day before, and wouldn't you know it, that's exactly what came with my meal!🥹 Sipping that comforting soup alongside the bibimbap felt like all my morning fatigue just melted away.
For me, even when dining solo,
a proper, satisfying meal makes the whole day feel less lonely.
After my meal at Jinsunmi Dolsot Bibimbap, I felt like I'd just enjoyed a wholesome, homemade meal – both my heart and my stomach were happily full! 💘
