The Ultimate Pasta Tier List
ⓒ Written & Photographed by Nomad Ssalmi
When you walk into an Italian supermarket,
the sheer volume of pasta brands can be overwhelming,
leaving you wondering which one to choose.

Did you know that depending on how well it holds the sauce
and how firm and satisfying the texture is,
there is actually a strict "tier list" when it comes to pasta?

Today, drawing from a video by the famous Italian YouTube channel
Vincenzo's Plate, combined with my own firsthand tasting experiences in Italy,
I’m going to share the absolute best pastas
you should bring home from your trip.

1. Two Must-Know Tips When Choosing Pasta

Before you even look at the brand,
just checking these two things on the back label
will help you choose a high-quality pasta.

💜 Bronze Die (Trafilata al bronzo) 💜
The surface of the pasta should look rough,
almost as if it's dusted with a fine white powder.
This texture helps the sauce cling perfectly instead of sliding off.
It's best to avoid smooth, shiny yellow pasta
made using Teflon extrusion.

💜 Protein Content (Protein) 💜
11–12% is average,
but you need 13–14% or more
to achieve that authentically firm
and bouncy al dente texture.
When I checked in person,
both the Voiello and La Molisana brands
had a protein content of 14%.
2. The Pasta Tier List
1️⃣
S-Tier
The Connoisseur's Choice
They are slightly on the pricier side,
but from the very first bite,
you'll immediately taste the difference.
These are truly top-tier artisan brands.

💜 Benedetto Cavalieri 💜
(Benedetto Cavalieri)
This is the absolute peak of chewy satisfaction.
The noodles are thick, so they take a bit longer to cook,
but the starch released from the pasta
makes the sauce incredibly rich and creamy.

💜 Mancini 💜
This brand uses only premium wheat
grown directly on their own estate.
It's highly regarded as the "luxury brand of the pasta world"
for its incredibly deep, rich flavor.

💜 Pastificio Cocco 💜
An artisanal brand that strictly adheres to traditional methods.
Thanks to its beautifully rough texture,
it pairs absolutely flawlessly
with any sauce you prepare.

💜 Felicetti 💜
Made with organic wheat and pure mountain water,
it offers an exceptionally clean, delightful flavor.
It's no wonder this is one of the most highly favored brands
among professional chefs.
2️⃣
A-Tier
The Ultimate Value: Guaranteed Success
This is my absolute go-to recommendation!
At a very reasonable price point,
it lets you fully experience the charm of authentic Italian pasta.
Best of all, you can easily find these at any local supermarket!

💜 Rummo 💜
Thanks to their slow-making process,
the pasta doesn't get soggy easily.
Even for kitchen beginners,
it's a lifesaver brand that always delivers a perfect texture.
It's a brand you can find internationally too,
though of course, there's a bit of a price difference!

💜 La Molisana 💜
It's famous for its high protein content
and rich, nutty flavor.
It's one of the easiest brands to find in local supermarkets,
yet the quality is absolutely top-notch.
I tried it myself and fell in love with the taste,
so I'm definitely packing some in my suitcase to take back home!

💜 Liguori 💜
A historic, high-quality pasta brand
that boasts the prestigious Gragnano PGI certification.

💜 Armando 💜
This brand offers unbelievable value for the money.
While it's highly budget-friendly,
its taste and texture easily rival high-end brands,
making it a favorite among locals.
3️⃣
Grade B
The Reliable Standard
They might lack a bit of "wow" factor,
but they are solid, dependable classics.

💜 De Cecco 💜
The absolute synonym for Italian pasta.
It's a staple brand
that you can easily find in global supermarkets too.
While it might not feel as uniquely exclusive as it once did,
it's still the safest, most reliable choice
you can grab off the shelf.

💜 Voiello 💜
A brand Neapolitans take immense pride in!
Made with 100% Italian wheat,
it offers a wonderfully heavy, satisfying chew.
Honestly, I absolutely loved this one.
It has such a great, toothsome bite to it.
4️⃣
Grade C/D
Budget-Focused
While they are incredibly cheap,
if you're looking to cook a gourmet meal,
these might leave you wanting a bit more.

💜 Barilla 💜
A very familiar brand, right?
Although it's the world's best-selling pasta,
the surface is quite smooth, so the sauce doesn't cling well
and tends to slide off.
It's best suited for light cold pasta salads.

💜 Divella 💜
The brand to go for when you are on a super-tight budget,
but it's hard to expect much in terms of
structure or deep wheat flavor.
I used to buy it back home just because it was cheap,
but after coming here and trying other brands,
the difference is night and day.
3. Wrapping Up

During my stay in Italy,
I tried so many different types of pasta,
and for the first time, I realized
how much the taste and texture vary by tier.
While S-Grade pastas
can be tricky to find in normal supermarkets,
Grade A pastas
can be bought at very reasonable prices
at any local market,
so I highly recommend picking up a variety
as delicious souvenirs from your trip to Italy!
I hope this guide helps you have
an amazing and delicious journey!

Frequently Asked Questions
What is the recommended protein content percentage to look for when choosing good pasta?
To achieve a true al dente texture with a good bite, the protein content should be 13-14% or higher. In fact, brands like Voiello and La Molisana have a protein content of 14%.
Should I choose Teflon-extruded pasta, which has a smooth surface, or bronze-die extruded pasta, which has a rough surface?
It is recommended to choose the bronze-die method, which gives the pasta a rough surface that looks like it's dusted with white flour. The smooth, glossy yellow Teflon-extruded pasta is best avoided, as the sauce may not cling well and tends to slide off.
What is an A-grade pasta brand that is easily found in Italian supermarkets and doesn't get mushy easily?
We recommend Rummo, which uses a slow-processing method that prevents the pasta from getting mushy easily. Even beginners can maintain a consistent texture, and it can be purchased at a reasonable price.
What kind of dish is Barilla, the world's number one selling pasta brand, best suited for?
Barilla pasta tends to have a smooth surface, which can cause the sauce to slide off rather than cling to it. Therefore, it is better suited for light salads rather than dishes with rich, heavy sauces.
