Hitsumabushi Bincho Nagoya Castle: Enjoy Eel Rice with No Wait
Discover the best Hitsumabushi in Nagoya at Bincho's Kinshachi Yokocho branch, conveniently next to Nagoya Castle. Enjoy this iconic eel rice bowl without long waits. A must-try!

If you're heading to Nagoya, Japan, you absolutely have to try Hitsumabushi. This isn't just any eel rice bowl; it's Nagoya's iconic specialty! Served in a round wooden 'hitsu' bowl, the eel is grilled to perfection – crispy on the outside, incredibly tender on the inside.
Among the top spots for this culinary delight is
“Hitsumabushi Nagoya Bincho.”
While they have branches in Tokyo, Osaka, and several locations across Nagoya, a popular eatery like this often means a long wait. But don't worry! In this post, I'll share a specific Hitsumabushi Bincho location where you can enjoy this exquisite dish with minimal waiting.
1. Hitsumabushi Bincho Nagoya Castle Kinshachi Yokocho Branch

If you're exploring Nagoya, a visit to Nagoya Castle is a must. And conveniently located right next to the castle is “Kinshachi Yokocho,” a charming shopping street designed to evoke the ambiance of old Japan.

It's a delightful, albeit compact, area brimming with traditional charm, and it's home to the Nagoya Castle branch of Hitsumabushi Bincho.

While there might still be a short wait, it's generally much better than the downtown locations. We only waited about 10 minutes before being seated!

The Nagoya Castle branch is quite cozy, which adds to its charm.
Once seated, we all ordered the Hitsumabushi with 3/4 of an eel, and I also grabbed a highball to complement the meal.
Hitsumabushi portions typically come with either 3/4 of an eel, a full eel, or 1.5 eels. For reference, the 3/4 eel portion costs around ~$24 to ~$25, a full eel is about ~$31 to ~$33, and 1.5 eels is roughly ~$42. (Conversion based on 1 USD ≈ 160 JPY)
Yes, it's a bit of an investment, but it's well worth it for this unique culinary experience!
2. How to Enjoy Hitsumabushi

Hitsumabushi isn't just a meal; it's an experience with a traditional way of eating it! You'll find instructions at your table, and I highly recommend following them to get the full flavor journey.

✅ First, savor it as served. Appreciate the eel's crispy texture and savory seasoning on its own. It's truly distinct from other eel dishes you might have tried.

✅ Next, mix in green onions and wasabi. The fresh zing of the condiments perfectly cuts through the richness of the eel, adding a new dimension of flavor.

✅ Then, transform it into Ochazuke. Add green onions, wasabi, shredded nori (seaweed), and pour dashi broth over your rice and eel. This creates a comforting, savory soup-like dish.

✅ Finally, enjoy the remaining portion using your favorite method from the first three! Personally, I'm not usually a fan of Ochazuke, but with Hitsumabushi, the umami of the eel combined with the dashi broth was absolutely delicious. Seriously, follow these steps – you won't regret it!

The rich flavor of the eel can sometimes feel a little heavy, but a refreshing highball is the perfect counterpoint. Its crisp, clean taste paired wonderfully with the Hitsumabushi. While beer is always an option, I found the highball offered a cleaner finish. If you're ordering drinks at Hitsumabushi Bincho, definitely consider a highball over a beer!
After our delightful meal, we simply walked next door to explore Nagoya Castle. The convenience of having this branch right by the castle makes it an ideal spot to combine sightseeing with a fantastic dining experience.

While other city center branches are known for longer waits, this location allowed us to enjoy our meal after only a 10-minute wait. So, if you're like me and hate waiting in long lines, the Nagoya Castle branch is definitely the way to go! And seriously, make sure Hitsumabushi is on your must-try list when visiting Nagoya.
