Looking for the ultimate carbonara in Rome? Read our honest review of al42 by Pasta Chef in Monti, a hidden gem serving authentic, fresh handmade pasta.
Traditional Roman Pasta Done Right
In Search of the Ultimate, Authentic Carbonara
When traveling through Italy, you quickly learn that every region boasts its own signature pasta specialties.
In Rome, the holy trinity of pasta consists of Carbonara, Amatriciana, and Cacio e Pepe.
While Carbonara is incredibly familiar to most of us, finding the real, traditional version can be surprisingly tricky. We set out on a mission to find the absolute best, authentic Carbonara in the Eternal City, leading us straight to a local favorite in the Monti neighborhood.

Determined to taste authentic Roman carbonara, we pinned "al42 by Pasta Chef rione monti" (or simply al42) at the top of our Rome food bucket list.
Since it is located just a short walk from the Colosseum, it is the perfect spot to grab lunch right after a morning tour. We headed over just in time for their opening hour.
The cobblestone alleyways leading up to the shop are absolutely picturesque. The clear blue sky framed by historic Roman buildings made for the perfect photo op.
2. Inside the Cozy Eatery & Ordering Process

When we first arrived, the street was quiet. Shortly after, the owner stepped out, arranged a few potted plants to guide the queue, and asked us to wait in line. We were first in line, but a crowd of hungry travelers quickly gathered behind us.

You place your order directly at the counter. Because the interior is intimate and cozy, the owner lets guests in group by group to secure a table first before ordering.
This is not a formal, high-end fine dining restaurant, but rather a casual, fast-casual pasta bar. This laid-back atmosphere also means the prices are incredibly reasonable for central Rome.
There are several high-top tables, wall-side seating, and a few more tables tucked slightly further inside.

While there is no draft beer, they offer a solid selection of bottled beers, Italian wines, and soft drinks to pair with your meal.
3. The Menu: Authentic Roman Flavors
What Makes a True Roman Carbonara?

Our order of two bottled beers, a sparkling water, and two plates of pasta came out to about $39 (36 EUR). Given the quality and location, this is an absolute steal in Rome.
We ordered the classic Carbonara and the Gamberoni (shrimp pasta in a rich tomato sauce).

They use fresh, handmade pasta (pasta fresca), and you can instantly see the difference in texture. The dishes arrived quickly, looking absolutely mouthwatering.
When ordering, the owner made sure to warn us multiple times: "Real, traditional Roman carbonara is very salty and intense. It can taste incredibly salty to international travelers, but this is the 100% original recipe. Are you okay with that?"
If you look at Google reviews, you will see a few lower ratings from tourists complaining about the saltiness. The owner clearly wants to manage expectations so people understand they are serving authentic heritage, not watered-down tourist food!

So, how did it taste?
It was so spectacular that we would return to Rome just to eat here again.
Yes, it is salty, but it is a complex, rich, and deeply savory kind of saltiness that pairs beautifully with the creamy egg yolk and sharp cheese. It was absolutely delicious!
The Gamberoni pasta was a perfect contrast. It wasn't as heavy or salty as the carbonara. The tomato sauce tasted incredibly fresh and bright, bursting with natural sweetness, and the shrimp were perfectly cooked. The chewiness of the fresh pasta was simply outstanding.
However, if you generally prefer low-sodium dishes or aren't adventurous with intense flavors, you might want to skip the traditional carbonara here.

We couldn't stop taking photos because the presentation was so beautiful. The fresh pasta holds the sauce perfectly, and they did not skimp on the plump, juicy shrimp.
Eating tomato-based dishes in Italy is always a revelation because the quality of the raw tomatoes is unmatched. Whether it is pizza or pasta, the high-quality ingredients elevate the dish to another level.

Traditional Roman carbonara uses egg yolks as the base rather than heavy cream. There was no trace of egginess or fishiness; instead, it was incredibly rich, accented by the sharp, earthy notes of Pecorino Romano cheese and crispy guanciale (cured pork cheek).
Since guanciale and Pecorino Romano are naturally cured and salty, the dish is meant to be savory. The generous crack of black pepper tied all the bold flavors together beautifully.
With a stellar 4.7 Google rating, it is clear that this spot is highly regarded, though opinions on the traditional saltiness do vary. If you are sensitive to salt, you might prefer a more tourist-friendly spot. But if you want to experience an uncompromising, budget-friendly taste of authentic Roman culinary tradition, al42 is a must-visit!

Ending our meal with a peaceful stroll through the gorgeous alleyways of the Monti district was the perfect finish to our lunch.
Have an amazing trip to Rome, and let us know in the comments if you have any questions!
