If you're planning a trip to Taipei, one dish that absolutely must be on your culinary bucket list is beef noodles! It’s a quintessential Taiwanese experience.
During my recent visit, I made sure to check out Master Jim Beef Noodle, a highly-rated Taipei restaurant that's also gained fame through popular YouTuber Yuk-sik-man.
I heard whispers of their incredible menu items, which have snagged awards at the prestigious Beef Noodle Festival in 2024, 2025, and even 2026! My excitement was through the roof, but I also knew about the notoriously long queues. So, I decided to go all-in and try an 'open run' – arriving right before opening to be among the first customers!

1. Taipei's Best Beef Noodle Spot

The spot I visited was Master Jim Beef Noodle, located right in Taipei!
If you've ever searched for the best beef noodles in Taipei, this place is bound to pop up. It really shot to fame after being featured on Yuk-sik-man's YouTube channel. (I admit, I saved it to my must-try list after watching his video!)

Their Hong Shao Beef Noodle, in particular, won the gold medal at the International Beef Noodle Festival in 2024. What's even more impressive is that they've continued to win awards for different menu items in both 2025 and 2026!

2. Master Jim 'Open Run' Experience

Knowing Master Jim's reputation for long queues, I decided to arrive around 11:10 AM.
Since they open at 12:00 PM, the restaurant was still closed, and even the waiting machine was off, which made me wonder if I'd arrived a bit too early. But I figured it was better to be safe than sorry, so I decided to wait!

Around 11:30 AM, a staff member came out and turned on the waiting machine, and I promptly registered for a spot.
Of course, I was number one! Mission accomplished! ㅎㅎ

There were even chairs outside the restaurant where I could comfortably wait.
Surprisingly, other customers started to trickle in only about 10 minutes before opening.

I spent my waiting time browsing the menu, and as soon as 12:00 PM hit, we were ushered right in!
Thanks to the 'open run,' I got to enjoy my meal without any waiting, being the very first customer of the day.
3. Inside the Restaurant

The restaurant's interior felt clean, modern, and inviting.
While you're enjoying a traditional Taiwanese beef noodle dish, the ambiance is more akin to a well-maintained, contemporary eatery rather than an old-school, rustic noodle shop. Since we arrived right at opening, we managed to snag our seats before the place got busy.

They have seating for solo diners, couples, and groups of four, but the total number of tables isn't huge!

Ordering was super convenient: just scan the QR code on the table with your phone. The menu was fully translated, which made things easy!
Plus, you can customize your order by choosing your preferred noodle type for each dish, adding an extra layer of fun to the experience. We decided to try different noodle types for our beef noodles to compare their textures.
4. Master Jim Menu

I ordered the Hong Shao Beef Noodle, Qing Dun Beef Noodle, and Golden Kimchi (Huang Jin Pao Cai).

First up, the Hong Shao Beef Noodle.
This was the beef noodle I was most excited about, as it won the gold medal in 2024. Hong Shao refers to a rich, savory broth typically made with soy sauce as its base, offering a deep and complex flavor.

For this one, I chose Dao Xiao Mian (knife-shaved noodles)! These noodles are uniquely cut, resulting in varying thicknesses that give them a wonderfully chewy texture.
If you want to try Master Jim's signature dish, I highly recommend pairing the rich broth with these Dao Xiao noodles for a truly authentic experience.

Next, the Qing Dun Beef Noodle.
Unlike the Hong Shao, Qing Dun Beef Noodle features a clear, lighter broth. It's almost like a comforting beef pho or a very clean beef noodle soup!
I opted for Japanese ramen-style noodles with this dish! The texture was distinctly different from the Dao Xiao noodles, making it fun to compare the two dishes side-by-side. I personally preferred this one, while my husband enjoyed the Hong Shao more.
If you're typically sensitive to stronger flavors in beef noodles, this clear broth version is an excellent choice!

Golden Kimchi (Huang Jin Pao Cai)
I ordered this as a side dish to accompany our noodles. It reminded me a bit of a mild white kimchi, and it was a great palate cleanser between spoonfuls of the rich noodle soups.

When we finished our meal and stepped outside, there was already a sizable crowd waiting, which really confirmed that our 'open run' strategy was a success!
While waiting times can vary depending on the day you visit, I highly recommend doing an 'open run' if you want to minimize your wait and enjoy a relaxed meal.

And here's one last insider tip!
Near Master Jim Beef Noodle, there's a fantastic spot called Ho Ho Mi So Boru that sells incredible pineapple buns. Make sure to grab one for dessert – they are absolutely delicious! You won't regret it.
