To celebrate Ttarang's birthday,
we headed to NÔM Dining,
located near the famous Pink Church in District 1 of Ho Chi Minh City.
We enjoyed a spectacular 3-hour dinner complete with a curated wine pairing!
They beautifully wove stories from North, Central, and South Vietnam
into their diverse course dishes,
and moving from floor to floor for different chapters of the meal was such a unique experience.
It felt like a true, curated culinary journey.

The power of experience.
Whenever I travel, I always search to see if there are any
Michelin Guide restaurants or local culinary gems nearby.
I believe that to truly understand and connect with a country's food and culture,
you should treat yourself to a fine dining experience at least once.
And that's exactly what brought us to NÔM Dining in Ho Chi Minh City, Vietnam!

NÔM Dining in Ho Chi Minh City
is led by Executive Chef Chris Fong (馮家豪).
At the Michelin Guide Vietnam ceremony held in early June,
they were honored as a 2026 Michelin Guide Selected restaurant,
and also took home the prestigious "Opening of the Year" award!
This special award is presented to the newly opened restaurant of the year
that showcases the most creative concept, exceptional culinary execution,
and the most prominent impact on the dining industry. Talk about impressive! 😲
Ho Chi Minh Fine Dining: NÔM Dining Prices
Based on the 12-Course Menu
- Adult: 3,280,000 VND
Including 7% service charge and 10% VAT
= 3,850,560 VND (~$138)
- Vegetarian: 2,480,000 VND
- Child: 790,000 VND

- Sommelier Selection (6 glasses): 2,280,000 VND
- Wine Pairing (4 glasses): 1,880,000 VND
- Sake Pairing (4 glasses): 1,580,000 VND
- Mocktail Pairing (4 glasses): 1,280,000 VND
- Kombucha Pairing (4 glasses): 1,180,000 VND
We opted for the Wine Pairing, and the cost per person
including 7% service charge and 10% VAT was:
= 2,212,304 VND (~$79)
Our wine pairing experience at NÔM Dining was so incredible
that we'll definitely be adding pairings to our future fine dining adventures.
Not only did the wines complement the dishes perfectly,
but we also got to discover some amazing new labels.
Honestly, now I'm slightly regretting not going for the Sommelier Selection... haha.

By the way, Yongbam accidentally matched his outfit perfectly with the NÔM Dining staff!
He honestly looked like he worked there, lol. ㅋㅋㅋ
Reservations are available for two seatings: 5:00 PM and 8:00 PM.
We went for the early dinner slot and visited at 5:00 PM.
Since it is a structured fine dining experience, if you are more than 15 minutes late,
they will skip the missed courses and proceed with the current course,
so make sure to arrive right on time!

At the entrance, after listening to a brief introduction about NÔM Dining
and the history of the Vietnamese script,
right before stepping into the dining space,
they hand you a boarding pass and
a passport-style culinary guide to fit their "gastronomic journey" theme.
The guide details NÔM Dining's concept and the dishes
with helpful explanations (and they even have Korean guides!),
so you can fully relax and enjoy even if your English isn't perfect.
Flavors of Northern Vietnam on the 1st Floor

Welcome Tea
Starting things off with a refreshing glass of traditional Vietnamese tea.

The Northern region menu starts light, serving as the perfect appetizer.
A tangy soup dish served on a small spoon,
featuring smoked amberjack, mustard green kimchi, and tomato jelly.
As for the dish on the left...
A bite-sized beef and pickled mustard green fried rice, crafted with beef tartare, mustard green kimchi, cucumber, and puffed rice.

Hanoi’s chicken noodle soup, 'Bun Thang'
Vietnamese pork ham, chicken meatballs, and shiitake mushrooms served pressé style in a rich Bun Thang broth.
Enjoy it in one big bite with a drizzle of coriander oil!



After enjoying the tea and appetizers, we listened to an explanation of the ingredients and Vietnamese history in a museum-like space, and then headed up to the second floor for our culinary journey to Central Vietnam!

You can choose a pairing menu here. My husband and I love wine, so we went with the wine pairing. But since they serve tea and broth throughout the meal anyway, you can easily skip the pairing if you prefer.
Still, I highly recommend the pairing! It's absolutely worth the experience. I also loved that they offer non-alcoholic pairings like mocktails and kombucha.

Starting with a refreshing tea, our journey to Central Vietnam begins with five different dishes!

Our first pairing wine is Chenin Blanc, a flavor that goes so well with summer.

With its refreshing acidity and a hint of a salty finish, it was the perfect aperitif to awaken our appetite.


A trio of pork marinated in fish sauce
We enjoyed different cuts of pork served with a fermented shrimp paste sauce. It tasted wonderfully familiar—almost like jokbal (pig's trotters) dipped in salted shrimp—but it was so fun and unique to compare the different cuts side-by-side.



In order: pork collar, pork belly roll, and pig's trotters. They advised us to eat them in that exact order: pork collar > pork belly > pig's trotters.

Hue-style baby clam rice bowl, 'Com Hen'
A vibrant baby clam rice bowl loaded with 10 ingredients, including baby clams, razor clams, fried pork rind, taro stems, pickled banana blossom, pickled shallots, star fruit, and peanuts.

They mix it right in front of you and portion it into your bowl, and you eat it alongside fresh raw abalone! A rice bowl combining baby clams and abalone? There’s no way this wouldn't be delicious.


It comes with a side of clam broth, and I fell so hard for its deep, savory flavor that I wanted a whole giant bowl of it...

It was seasoned with a base of fish sauce and chili oil, but

We got to try two different styles of Central Vietnamese nuoc mam (fish sauce)
and choose the one that best suited our personal tastes.
It was a small detail, but being able to actively participate
and customize the flavor profile made the whole experience so much more memorable.
