Many travelers swear by Ichiran Ramen as a foolproof choice,

and it truly lives up to its reputation for satisfying diverse palates.

During my recent visit, I finally tried the Canal City branch after enjoying the fountain show. I can confidently say that among the various Ichiran locations, this one perfectly hit the spot for me!

Location

You won't find Ichiran Ramen in the main Ramen Stadium area of Canal City.

Instead, head to the North Building, on the first basement level.

Walk straight across from the fountain show area, and you'll spot a cafe and a takoyaki shop.

Ichiran is tucked away between them.

It's not far from the entrance, so you should be able to locate it quite easily.

Waiting

I visited on a weekday around 7:50 PM, and there was no waiting line. Just two groups were ahead of me, ordering at the kiosk.

Ichiran Ramen is known for its long queues, and this branch can see waits of over an hour and a half on weekend lunchtimes. I highly recommend visiting on a weekday if possible!

Menu

A single bowl of Tonkotsu Ramen costs ~$7. There's also the Ichiran 5-piece set, which includes seaweed, chashu pork, a soft-boiled egg, and an extra serving of noodles.

You can add extra noodles, more chashu, beverages, draft beer, and even matcha pudding for dessert.

You can add toppings even while you're eating, so I generally recommend starting with the basic ramen!

How to Order

While you're in line for the kiosk, a staff member will hand you an order sheet.

You'll pay for your meal at the kiosk (which has an English language option and accepts card payments). Then, you'll use the order sheet to customize your ramen's spice level, richness, and other toppings.

Make sure to hold onto the meal ticket you receive from the kiosk!

Once you're seated, use the pen provided at your table to mark your preferences on the order sheet. Ring the call button, and hand both the completed sheet and your kiosk ticket to the staff member.

I prefer milder flavors, so I checked the 'basic' option for everything except richness. If you love spice, many people go for level 5 or higher!

Atmosphere

The interior features individual booths with partitions, designed for a focused dining experience.

While two people can sit side-by-side, there are no dedicated two-person tables. Tissues and toothpicks are located near the entrance.

Each seat comes with its own water dispenser and disposable chopsticks.

On the right wall of your booth, you'll find signs to communicate with staff without speaking, along with extra order sheets for additional items.

These signs include phrases like "I'll be back shortly," "I don't know how to order," or "The noise around me is bothering me."

The Ramen

First up, a refreshing draft beer! Japanese draft beers are always so delicious, it's a real treat.

Before I could even take a few sips, my Tonkotsu ramen arrived! I was a bit surprised by the square bowl, thinking it looked different from the Ichiran I knew, but a quick read explained that this unique bowl is exclusive to the Fukuoka Canal City branch.

I chose the 'standard' noodle firmness, and it was perfectly cooked—neither too tough nor too soft, offering a delightful chewiness.

The chashu pork was incredibly tender and flavorful, with no unpleasant aftertaste. Two slices felt a little scarce, making me seriously consider ordering more!

The broth, made from pork bone marrow, was rich and complex yet surprisingly clean, with a deep, satisfying umami flavor.

If you usually eat less salty foods, you might find it a touch strong, but it's definitely less salty than many other ramen shops in Japan!

This was my first time trying Ichiran Ramen, and after experiencing it myself, I completely understand why it's such a popular choice among international visitors. If you're looking for a guaranteed delicious meal in Fukuoka, I highly recommend Ichiran Ramen!
