This spot just opened less than a month ago, but it's already creating a buzz among locals and getting a lot of attention in Tenjin!
You can truly experience the magic of Hitsumabushi here: starting by savoring the wagyu and rice in their pure form, then adding condiments for a new flavor adventure, and finally, pouring warm broth over it all. I'm excited to recommend this fantastic Hitsumabushi spot in Fukuoka!

📍 Wagyu Hitsumabushi SAMURAI
2-chōme-1-31 Daimyō, Chuo Ward, Fukuoka, 810-0041 Japan

The restaurant offers both solo seating for single diners and comfortable tables perfect for groups of 2-4.
I visited just after the main meal rush, so the tables showed signs of a busy crowd having just enjoyed their meals.
Just a heads-up, during peak hours, you might encounter a bit of a wait!
2. Menu

✔ Black Wagyu Lean Cut
✔ Black Wagyu Premium
✔ Premium Sirloin
As a Hitsumabushi specialty restaurant, their menu focuses solely on these exquisite rice bowls. You can also add extra meat to any dish, which I highly recommend if you have a hearty appetite!
3. Hitsumabushi Review

Black Wagyu Lean Cut (Double Meat) 4,780 yen
Since I'm a big meat lover, I opted for double the portion. The wagyu was so incredibly generous, it wasn't just layered on the rice; it was practically overflowing!

The vibrant, rosy hue of the meat was absolutely stunning! Even though it was all lean cut, it was incredibly tender, not dry at all, allowing me to fully savor that distinct, clean flavor of wagyu.
It was wonderfully clean with less fat. I was so glad I decided to double the meat portion; it meant I could indulge in generous servings of both rice and wagyu!

Black Wagyu Premium 3,980 yen
The Black Wagyu Premium came adorned with delicate gold leaf, making its presentation even more spectacular 👀✨
Unlike the lean cut Hitsumabushi, this one boasted intricate marbling throughout, looking incredibly tender at first glance.

It melted ever so tenderly in my mouth, and the perfect amount of fat gave it such a wonderfully rich and savory flavor.
Unlike the lean cut's delicate and clean flavor, this one truly showcased the deep, rich umami of wagyu. I highly recommend it to anyone who loves that uniquely rich, indulgent taste of premium beef!

Premium Sirloin 4,980 yen
My companion ordered the Premium Sirloin, and
the sirloin in my mouth
was so tender it melted away,
and the more I chewed, the richer the meat flavor became.

Then, I popped the egg yolk
and generously coated the meat with it before eating.
The savory taste of the sirloin combined with the creamy yolk
created an even deeper flavor for the Wagyu donburi 🥹
If I visit again, I'd definitely go for the Premium Sirloin
and add extra meat, lol!

Once you've enjoyed the Wagyu donburi to some extent,
scoop some rice and meat into a smaller bowl,
add toppings like wasabi and seaweed,
pour in the broth, and you can enjoy Hitsumabushi.

When eating Hitsumabushi, it's also great to add mentaiko (pollock roe) and salmon roe
as extra toppings
and enjoy them together.
The salty flavor of mentaiko
and the popping texture of salmon roe
make for an even richer experience.

By the way, while the Hitsumabushi toppings and broth are the same,
the taste varies depending on the cut of meat!
Perhaps because the fat melts into the broth,
adding to the Wagyu flavor,
it tasted slightly different when I had the lean cut versus the marbled cut.
So, even when enjoying it with the same broth,
depending on which cut of meat you choose,
you can savor a different experience right down to the last spoonful.

Emerging as a must-visit spot for Wagyu donburi in Fukuoka,
SAMURAI
From Wagyu donburi to Hitsumabushi,
you can enjoy a variety of dishes,
and with high-quality Kuroge Wagyu,
you can have a satisfying meal.
So if you're looking for a great Wagyu spot in Fukuoka,
I highly recommend Samurai!
