I watched the show from near the Takao Tempura restaurant on the 3rd floor of Canal City. You don't necessarily need to hunt for a 'prime spot' – if you head to where the music is playing on the upper floors, you'll have a fantastic view.
However, I will say that the projection mapping shows after 6:00 PM are on a whole different level of spectacular. Personally, I think it's a great idea to grab dinner in nearby Tenjin or Hakata and then take a leisurely stroll over to Canal City afterward.
Even if you only set aside about 30 minutes, you're almost guaranteed to catch either a basic fountain show or one of the main projection mapping spectacles.
