My husband, who's practically a Suwon local after working here for nearly a decade, has been raving about a few spots. High on his list was a particular sujebi (hand-pulled dough soup) and kalguksu (knife-cut noodle soup) place. So, we finally embarked on a little 'food tour' of his favorite eateries near Suwon Station, and Bubu Son Kalguksu was a definite highlight!
This isn't just any noodle spot; they hand-make their dough, resulting in incredibly tender, thin sujebi. The broth is clean and comforting, and for those who like a kick, they also offer a spicy Jang Kalguksu. Plus, the portions are incredibly generous – you definitely won't leave hungry!
My husband is quite particular about his kalguksu. He prefers the clean, anchovy-based broth over seafood varieties, which can make finding a place that truly satisfies him a challenge. He once had a go-to spot near his old office, but it changed owners and, sadly, the taste along with it. So, when he gave Bubu Son Kalguksu his stamp of approval, I knew it had to be good!

The restaurant itself isn't huge, so it can get quite busy, especially during lunch hours.

You can grab extra kimchi, pickled radish, plates, and soy sauce from the self-service bar.

You can often see the 'Imo-nim' (a respectful term for older women, often used for restaurant staff) busy in the kitchen, hand-pulling the sujebi dough. It's truly a labor of love!

The broth here is naturally clean and savory. I heard the sujebi soaks up the broth even better than the kalguksu, so I opted for the sujebi, though I'm told the kalguksu is excellent too.

As a big fan of flour-based dishes, I love both kalguksu and sujebi, but I'm not a fan of thick, chunky, old-fashioned sujebi. This place, however, makes it incredibly thin and delightfully chewy – absolutely delicious!


The broth is fantastic, too, enriched with potatoes and shrimp, giving it a wonderfully deep flavor.
Spicy Mandu Sujebi
Where were the dumplings, you ask? Well, they were forgotten at first due to the busy kitchen, but the staff quickly brought them out separately, perfectly cooked.

The spicy sujebi is essentially a 'Jang Kalguksu' style, made with a rich, spicy gochujang-based broth. It also featured generous shrimp. At first, I didn't think it was that spicy, but as I kept eating, the heat really built up – a delicious slow burn!
I was so impressed by the chewy texture of the sujebi dough, and the portion size was definitely not small!


It was incredibly generous, truly worth every penny.
I kept digging and digging, and there was always more, so much so that I couldn't even finish it all.


The dumplings were pretty standard, large meat dumplings – perfectly fine, but the sujebi is the real star.
Overall Thoughts
This spot is perfect for a quick, hearty meal if you're around Suwon Station, and you'll often see solo diners enjoying their food. The owner and kitchen staff were all very friendly, adding to the warm, old-school charm of the place.
While it's run by an older generation, giving it that classic 'local eatery' vibe, the hygiene might not be five-star spotless – but that's part of the authentic experience, right? 😉
Personally, I preferred the spicy sujebi because of its fantastic kick.
The sujebi is about ~$1 more, but it's absolutely worth it for that incredible chewy texture.
My husband, being a regular, says all their dishes – the spicy sujebi, regular sujebi, and kalguksu – are equally delicious.
The dumplings and kimchi were decent, but frankly, the noodles are where it's at!
Perhaps it's my love for all things dough, but while the spicy broth was delicious, it's the thin, chewy sujebi dough that truly makes this place unforgettable and keeps me craving more.

After our meal, we even got a peek at my husband's office nearby – the kids were thrilled, and I just felt a pang of sympathy for my hardworking husband seeing his workspace!
