See it? That glistening, tender pork intestine! 🐷 It's incredibly succulent and has a beautiful sheen. Now, if you're used to the chewy, grilled intestines you might find elsewhere, these are different. They're incredibly soft, almost melt-in-your-mouth, which can be a surprise for some. (This is often where the "love it or hate it" factor comes in!) But personally, I find that softness absolutely delicious.

The noodles themselves are a finely-textured vermicelli, cooked until wonderfully tender, making them incredibly easy to slurp down. I admit, the first time I tried it, I was a bit hesitant because of its unique appearance and all the talk about it being an acquired taste. But now? It's pure magic. Just looking at these photos makes my mouth water!

I don't recall if they always had these, but now you'll find chili sauce, garlic sauce, and black vinegar readily available on the side.

You can add them to your intestine noodles as you like. Honestly, it's fantastic on its own, but I remember mixing the chili and garlic last time, and it was absolutely divine!

While there are a few chairs around, seating is quite limited. It's best to go in with the mindset that you'll be enjoying your noodles standing up, slurping them down quickly like a true local!
