Utsukushii Deai (Beautiful Encounter)

The single line at the entrance, "Beautiful Encounter," left a deep impression on me.

As stated at the entrance, it operates on a 100% reservation system.
You can make a reservation on Naver.

We had to wait a little bit outside until our reservation time.
When you open the door, you don't immediately enter the dining area; instead, you find a long, alley-like passage.
Since it's by reservation, a staff member confirms your booking and guides you to the entrance.
Interior

Stepping inside, the modern and clean interior immediately captures your attention. A major highlight here is that all seats are designed like private rooms, allowing an open feel without guests disturbing one another. Whether for small gatherings or larger groups, I appreciated how it allows you to fully focus on your meal without any external distractions.

Here's the basic table setting.
Although we ordered Hanwoo Omakase, a variety of fusion dishes are served, so forks, knives, spoons, and chopsticks were all provided for comfortable dining.

This sequence makes up an 11-course meal.

There was a diverse selection of alcoholic beverages, including wine and sake.
We opted for a light beer.
Amuse-bouche - Chawanmushi

First to arrive was the Chawanmushi, a Japanese steamed egg custard, a smooth bite that hinted at the delights of the course to come.
Served with plump shrimp, it was visually appealing and added a delightful chewiness.
Seasonal Fish Dish - Sashimi

They mentioned that the type of sashimi changes frequently as they prepare seasonal fish. For us, they prepared smoked Spanish mackerel sashimi in a fusion style.

We ordered a draft beer, and I opted for a non-alcoholic beer due to driving.
Truffle Ragù Pasta and Hanwoo Chuck Flap Steak

Indulge in rich, aromatic ragu pasta generously topped with truffles, alongside your first exquisite serving of grilled Hanwoo beef.
The true beauty of Seowoo Hanwoo Omakase lies in this: the chef meticulously prepares each dish, allowing you to savor the meat at its absolute peak of flavor. It's an experience designed for perfection!
The Open Kitchen Experience

Watching the culinary magic unfold right before your eyes, and hearing detailed explanations about each dish as it's served, makes the hour-and-a-half dining experience fly by in a flash. It's truly captivating!
Lobster

A whole lobster arrived, perfectly cooked and ready to enjoy – talk about a feast for the senses!
The succulent lobster meat easily separated from its shell, and paired with the accompanying sauce, it was absolutely divine. Pure bliss!
Second Grilled Hanwoo Cut – Tenderloin

The incredibly tenderloin, resting beautifully on a bed of creamy mashed potatoes, was served alongside perfectly cooked mushrooms. A match made in heaven!
I ordered it medium-rare, and they always ask for your preferred doneness when you order, ensuring every bite is just how you like it!
Noodle Dish – Shiitake Udon

This dish truly impressed me with its unique burdock root. The exquisite broth, made from katsuobushi (bonito flakes) and shiitake mushrooms, combined with the wonderfully soft noodles, created an incredibly delicious and comforting dish.
Third Grilled Hanwoo Cut – Sirloin

Prepare for a treat! This straw-smoked sirloin is a true highlight, served with a delectable blueberry and red wine sauce that perfectly complements its rich flavor.
Stone Pot Rice (Sotbap)

The stone pot rice (sotbap) is typically served at the end of the meal, and they even kindly showed us how it was prepared beforehand – a wonderful peek behind the culinary curtain!
Chicken Dish

This chicken dish was nothing short of a culinary masterpiece!
This exquisite dish featured perfectly sous-vide chicken resting on a bed of fragrant chamnamul pesto, beautifully finished with a vibrant orange sauce and green oil. Every element was a work of art!
Concluding Dish – Harumaki (Spring Rolls)
Harumaki is the Japanese term for spring rolls – those delightful parcels made by wrapping various fresh vegetables and other delicious ingredients in a thin, crispy wrapper.

Enjoy these delicious harumaki with a unique base sauce featuring creamy ricotta cheese and delicate crab meat, all complemented by a delightful crunch from a variety of nuts. It's an unexpected and wonderful flavor combination!
Stone Pot Rice (Sotbap)

The beautiful stone pot rice (sotbap) we were shown earlier was now served, perfectly accompanied by a comforting bowl of miso soup.
It had a delightful flavor profile, reminiscent of sweet potato and savory bulgogi fried rice – a truly satisfying and unique blend!
Dessert – Tiramisu
To conclude this incredible culinary journey, large, luscious Shine Muscat grapes and a decadent tiramisu were presented as dessert. Pure indulgence!
My mouth was filled with a wonderful sweetness, a perfect ending to the meal.
