I spent some delightful time at the very heart of this vibrant city:

the **Mercado Central (Central Market)**.

It's a fantastic spot to sample an array of delicious local treats.

As one of Europe's largest and oldest markets, boasting over a century of history,

Mercado Central offers an incredible selection of tempting foods.

The best part? You can savor a diverse range of dishes at much more affordable prices than most restaurants.

It's a feast for the eyes as much as it is for your taste buds!

If you're in Valencia, you simply can't leave without trying **Paella**!

In many restaurants, you'll need to order a minimum of two servings,

and cooking it takes time, often requiring advance reservations.

However, at the market, you can grab a single serving

and even try various types alongside other market goodies, which I absolutely loved.

The most popular choice, and the original paella, is the

**Paella Valenciana**, traditionally made with rabbit meat.

Since we had tried that elsewhere, this time we opted for the **squid ink paella**.

The rich, savory squid ink deeply infuses every grain of rice,

creating an explosion of umami flavor that's utterly delicious.

Pair it with some alioli (garlic sauce) to enhance the taste and keep it from becoming too rich.

Don't forget to ask the vendor for a dollop!

3. Jamón Bocadillo (~$6)

As I walked through the market, I noticed one stall with an unusually long line.

It turned out to be a **Bocadillo** (sandwich) spot, where they freshly slice jamón right in front of you.

You can either choose from pre-made bocadillos or select your preferred type of jamón to be sliced fresh.

We watched what others were ordering in line and simply followed suit.

We ordered an **Ibérico Bocadillo**, and the thinly sliced Ibérico jamón had that distinct, rich meaty flavor and delectable fat that perfectly complemented the crispy baguette.
